What in the world is Delicata squash?

Fall makes way for so many kinds of squash on our tables, including one you may not have heard of before-Delicata squash.  It looks like a gourd, but be sure not to pass up this easy to cook veggie when you see it.

 

Delicata squash tastes like pumpkin or butternut, and can be prepared similarly, but it has even more to offer!  The best part of this smaller variety is that you can eat the skin.  No peeling required!  So you can make quick dishes with little effort, and a really great fall flavor.

 

Cut it into rings, remove the seeds, and toss in your choice of seasoning-anything from parmesan & olive oil (try this from Skinny Taste) to cinnamon & brown sugar (here’s a recipe from Dinner at the Zoo), and roast.  Slice thin & roast for delicious fries!

If you want a quick, low calorie entrée, you can stuff your Delicata squash with rice, quinoa or Farro and other veggies like tomatoes & peppers, or add some lentils or ground turkey.  Season as you like & roast for less time than you would butternut or pumpkin.  We promise you will LOVE making it this way!
