Tacos Camarón
Fresh salsa, crema, shrimp served in your favorite tortillas. This is how you do Mexican food at home. Courtesy of Chef Michael.
Ingredients
Make the salsa...toss together:
- 4 oz cherry tomatoes quartered
- 1/4 each Maui onion diced
- 1 each pasilla pepper diced
- 1 Tbsp olive oil
- 1/2 lime juiced
- 1/2 tsp salt
Make the crema...whisk together:
- 1/3 cup mayo
- 1/2 cup sour cream or plain yogurt
- 1/4 tsp salt
- 1/4 tsp garlic
- 1 lime squeezed
Fish
- 8 oz shrimp peeled with tails off
- 1 Tbsp olive oil
- 1/2 tsp each: chipotle, cumin, coriander
- thinly shaved cabbage for topping
- sliced avocado for topping
- tortillas
Instructions
- Marinate shrimp in olive oil, chipotle, cumin & coriander.
- Sauté shrimp on medium high heat until cooked through.
- Add to your favorite tortilla, top with cabbage, salsa, crema & avocado. Squeeze fresh lime juice & enjoy!
