This one-pot peachy chicken and rice recipe is easily substituted with tofu or shrimp & amazingly easy. So sweet and yummy, the whole family will want it again and again!
Slow Cooker Peachy Chicken & Rice
Ingredients
- 1 pound boneless skinless chicken breast or any protein-tofu, pork, shrimp are all excellent with this dish
- 3 peaches semi ripe, pitted and cut into thick slices
- 1/4 cup coconut vinegar or any white vinegar
- 1/4 cup soy sauce
- 2 tsp minced fresh ginger
- 1/4 cup sweet onions
- 1/4 cup carrots
- 1 handful snap peas inside pods
- 2 tsp kosher salt
- 1 tsp fresh ground pepper
- 2 cups cooked brown rice
Instructions
- Place chicken, peaches, vinegar, soy sauce, ginger, salt & pepper in the slow cooker, and let marinate for a few minutes while you prepare the veggies.
- Slice the onions, & chop the carrots and ginger. Add all the veggies to the slow cooker.
- Cook on high for about 2 hours, or low for 4 hours, until chicken is 165° inside and peaches are super soft and falling apart.
- When the chicken is almost done, cook the rice.
- Take all ingredients out of the slow cooker and top the rice with it. Spoon the juices on top. Chop the chicken & mix everything together to serve.
Notes
The best part of this recipe is that you can substitute a lot of the ingredients, and add more or less of your favorite. Let the slow cooker do the magic!
