Roasted Delicata Squash
Ingredients
- 1 delicata squash
- 1 tbsp oil (avocado olive or algae)
- Salt and pepper to taste
Instructions
- Preheat oven to 400ºF. Prepare squash: thoroughly wash the outer skin. Cut off the ends, slice the squash in half lengthwise then scoop out the seeds. Slice the squash into 1/2 inch rings and transfer to a large bowl. (You can microwave the squash 5 minutes to make slicing easier)
- Toss squash with oil, salt and pepper. Transfer to a greased rimmed baking sheet and arrange in an even layer.
- Roast for 10 minutes then flip squash. Roast 10 more minutes. Broil on high for 2-3 minutes to brown the tops.
- Salt and pepper to taste and serve.
