Roasted Brussels Sprouts & Spiced Apple Salad

Roasted brussels and spiced apple salad with cashew, gremolata, feta & pomegranate

Ingredients
  

  • 1 lb Brussels sprouts
  • 1 each Apple
  • 1/4 tsp coriander
  • 1/4 tsp cinnamon
  • 4 oz Feta cheese
  • 1 each Pomegranate
  • 1 bunch Basil layer, roll leaves and slice
  • 1 tbl Fresh Ginger grated or minced

Gremolata

  • 1 cup Cashews
  • 1/2 cup olive oil
  • 1 each Lemon juiced and zested
  • 1 bunch Cilantro

Instructions
 

  • Rinse and cut brussels sprouts in half
  • Core and slice apples, then cut slices in half to make evenly sized pieces
  • Heat olive oil over medium high heat, then add brussels, cut side down. Cook 5 minutes.
  • Toss apples with coriander and cinnamon, add to pan and saute till they start to change color
  • While cooking, mix Gremolata ingredients together
  • When apples and Brussels are tender but still firm toss in basil and ginger for 1 more minute
  • Top with gremolata, feta cheese and pomegranate seeds.

Notes

Goes great with a grilled steak or blackened fish
