Red Cabbage Slaw
Ingredients
- 1 medium cabbage thinly sliced (a mandolin works nicely)
- 2 small carrots grated (use a box grater or food processor)
- 1 small red onion finely chopped or thinly sliced
- 1/4 cup balsamic vinegar or apple cider vinegar
- 2 tablespoons extra virgin olive oil
- 2 tablespoons sugar or honey
- 2 tsp. celery seeds
- Salt & Pepper to taste
Instructions
- In a medium serving bowl, combine veggies
- In a microwaveable bowl, whisk together vinegar, sugar till dissolved. Slowly whisk in seeds, oil, salt & pepper to taste
- Pour dressing in with veggies and toss to coat well. Cover and let sit at least 1 hour.
- Remove from the fridge just before serving and give a good stir with a large fork. Enjoy!
