Fresh Pizza Sauce with Roasted Tomatoes
Ingredients
- 2 lbs tomatoes fresh, cut into quarters
- 1 Bell Pepper
- 1 red onion chopped
- 12 cloves fresh garlic
- 2 tbsp tomato paste
- 1 tsp honey
- 2 tsp salt
- 1 tsp black pepper
- 2 tsp Dried Parsley
- 2 tsp dried oregano
- 2 tsp dried basil
- 1/2 tsp rosemary
- 4 tsp extra virgin olive oil divided into 2 portions
Instructions
- Preheat oven to 375 degrees
- Cut the tomatoes, onions and bell pepper into equal size chunks
- In a mixing bowl, add the spices and oils together and mix into a paste. Toss in the chopped veggies and coat well
- Place the coated veggies onto a baking sheet and put into the oven
- Roast for about 30 minutes, until browned on the edges
- Remove from oven and let cool for about 5 minutes
- In a medium pan, add the remaining oil and heat for 30 seconds
- Remove from heat and use immediately or refrigerate for about 1 week. Can be frozen too.
