Pumpkin Spice Smoothie
Made with a fresh baked pumpkin, this tasty smoothie will make any day a holiday!
Ingredients
- 1/2 each fresh pumpkin personal size (mini)
- 1 each avocado cut in half, seeded
- 4 cups almond milk unsweetened
- 4 tbsp hemp seeds
- 6 each medjool dates
- 4 tbsp pure maple syrup, honey, or agave
- 1 tsp cinnamon
- 1 tbsp turmeric
- 1/2 tsp ginger fresh or powdered
- 1/4 tsp nutmeg
- 8 ice cubes Omit if you want a hot drink. Heat the almond milk prior to blending.
Instructions
- Preheat oven to 350 degrees. Cut top off pumpkin, put back on and place on cookie sheet. Bake 30 minutes till soft
- Allow pumpkin to cool and scoop out the seeds. (May be baked the day before. Keep in refrigerator up to 5 days)
- Cut pumpkin in half and scrape the flesh out. Put into your Vitamix
- Add the almond milk and the rest of the ingredients and blend till smooth. If too thick, add more milk.
- Pour into mug or mason jar, add whipping cream and sprinkle with nutmeg. Maybe add a few pomegranate seeds to make it pretty!
