Peach Crumble
Plum Crisp with Cashews & Coconut (vegan)
A fruit dessert you can have for breakfast! Best to make with super ripe plums. This is a vegan, no refined sugar recipe that highlights the natural sweetness in the fruit. The natural sourness of the plums complement the light and sweet crumble, while the coconut and cashews give it a delightful crunch.
Ingredients
- 8 plums (peaches or nectarines)
- 1/2 cup raw cashews
- 3/4 cup oatmeal
- 3/4 cup almond flour
- 1/2 cup pure maple syrup
- 1 tbl fresh lemon juice
- 2 tbl coconut oil melted
- 1 tsp cinnamon
- Pinch sea salt
- 1/4 cup unsweetened, shredded coconut
Instructions
- Preheat oven to 350F
- Slice the plums, pit and spread in a baking dish.
- Sprinkle the plums with lemon juice, 1 tablespoon of the maple syrup
- Mix the cashews, flour, coconut oil, maple syrup, vanilla extract and the cinnamon in a food processor. Add the oatmeal, coconut and the salt and pulse a few times.
- Spread the crumble over the plums.
- Bake for 20-25 minutes
