How to Cook Spaghetti Squash...quickly
I prefer roasting my veggies, but when it's hot or I'm in a hurry, then the microwave is my friend! Don't leave your spaghetti squash languishing on the counter because you don't have time to cook it! Then use it as a pasta replacement, a burrito or pizza bowl. Here's a great recipe from Delish.
Instructions
- Cut it in half and scoop out the seeds. Spaghetti squash can be difficult to cut in half, so be patient and use a sharp knife. First, cut the stem off, then stand the squash up with the cut side down. Very carefully cut the squash in half lengthwise. If you find your knife getting stuck turn the squash on its side and use the part you've already cut to help guide your knife to finish cutting the squash in half. Once open, use a spoon to scrape out the seeds. Roast the seeds just like you would pumpkin seeds, if you like!
- Steam it. Use a microwave safe dish that fits inside of your microwave and can hold the squash halves. Place squash cut side down in dish and pour in about 1" of water. Place in microwave and cook on high for 20 minutes or until you can poke inside easily with a fork.
- Shred it and make it your own. Let your squash cool for a few minutes until it is cool enough to handle. Use a fork to shred the insides. Toss the "noodles" with marinara, olive oil, or whatever your desired toppings are. If you are willing to turn the oven on, a quick broil turns it into a creamy four-cheese squash masterpiece.
