German Rotkohl (Sweet/Sour Red Cabbage)
Ingredients
- 1 red cabbage very thinly sliced
- 1 yellow onion finely diced
- 1 semi-tart apple peeled, cored and diced
- 1/4 cup olive oil
- 2-3 tbsp vinegar
- 1 bay leaf
- 1 tsp sugar
- 1 tsp salt
- 2 cups water
Instructions
- Cook the onions in a pot until caramelized and just beginning to brown for 7-10 minutes.
- Add the cabbage and cook for 5 minutes. Add the apple, water, bay leaf, vinegar, sugar and salt. Bring to a boil, reduce the heat to low, cover and simmer for 1 hour, stirring occasionally. Add more water if needed to cook the cabbage until dissolved.
- Add more salt, sugar and vinegar to taste. Serve.
