Carrot Ginger dressing reminiscent of the best Thai salads!

Fresh Salad with Carrot Ginger DressingDressing
Ingredients
Dressing
- 2 large carrots peeled and roughly chopped
- 2 large shallots peeled and roughly chopped
- 1/4 cup roughly chopped fresh ginger
- 2 Tbsp white miso
- 1 1/2 tsp rice wine vinegar
- 2 Tbsp toasted sesame seed oil
- 1/2 cup grape seed oil
- 1/4 cup water
- 1/2 tsp coarse salt
- 1/2 tsp freshly ground black pepper
Salad
- 1 head lettuce
- 1/4 red onion thinly sliced
- 1/4 avocado diced
- 1/4 avocado diced
Instructions
- Add the salad ingredients to a bowl.
- Puree all the dressing ingredients together in a food processor or blender until smooth.
- Liberally dress the salad & serve.
