Egg Roll in a Bowl

A healthy twist on egg rolls that can be customized to your taste.  Skip the deep fried and treat yourself to this healthy alternative to egg rolls, in a bowl!

Egg Roll in a Bowl

Ingredients
  

  • 1 lb ground meat your choice-meatless crumbles, turkey, chicken, pork beef, or cauliflower
  • 1 cup shredded cabbage
  • 1 cup shredded carrot
  • 3 cup mandarins
  • 2 tablespoons coconut aminos
  • ginger and garlic to taste
  • 2 stalks green onions sliced
  • water for blending

Instructions
 

  • Cook ground meat over medium heat in a large skillet until no longer pink.
  • While the meat is cooking, add 1/2 cup mandarins to a blender, along with coconut aminos, ginger and garlic and blend. Add water as needed to blend easier.
  • Add in cabbage, carrots, and blended juice to skillet and cover. Cook covered until veggies reach your desired level of crunch.
  • Top with remaining mandarins and green onions.
