A healthy twist on egg rolls that can be customized to your taste. Skip the deep fried and treat yourself to this healthy alternative to egg rolls, in a bowl!
Egg Roll in a Bowl
Ingredients
- 1 lb ground meat your choice-meatless crumbles, turkey, chicken, pork beef, or cauliflower
- 1 cup shredded cabbage
- 1 cup shredded carrot
- 3 cup mandarins
- 2 tablespoons coconut aminos
- ginger and garlic to taste
- 2 stalks green onions sliced
- water for blending
Instructions
- Cook ground meat over medium heat in a large skillet until no longer pink.
- While the meat is cooking, add 1/2 cup mandarins to a blender, along with coconut aminos, ginger and garlic and blend. Add water as needed to blend easier.
- Add in cabbage, carrots, and blended juice to skillet and cover. Cook covered until veggies reach your desired level of crunch.
- Top with remaining mandarins and green onions.
