Coleslaw
1/2 cabbage, chopped
1 tbsp salt
1 cup carrots, shredded
1/2 onion, chopped
1/2 cup sugar
1/2 tsp salt
Ingredients
- 1 tbsp salt
- 1 cup carrots shredded
- 1/2 onion chopped
- 1/2 cup sugar
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 3/4 cup low-fat mayo or yogurt as a healthier alternative
- 1/4 cup milk
- 2 tsp ½lemon or lime juice
- 1 tsp ½vinegar
- 1 tsp celery seed optional
Instructions
- Place cabbage in a large colander and sprinkle with the salt. Now, place in sink. After 20 minutes, rinse the cabbage.
- Place the cabbage, carrots and onion in a large bowl. Toss to mix. In a medium bowl, whisk together all the other ingredients.
- Add the dressing to the cabbage mixture, and stir until fully mixed. Place in the fridge for at least 2 hours.
- Remove from the fridge just before serving, and give a good stir with a large fork. Enjoy!
