Chickpea & Chard Salad Rolls
Here's a delicious vegan replacement for a tuna sandwich!

Ingredients
- 2 tsp plain nondairy milk
- 2 tsp freshly-squeezed lemon juice
- 1 1/2 tsp red wine vinegar
- 1 tsp tamari
- 1/2 tsp dijon mustard
- 1/2 tsp kelp granules
- 1/4 tsp pure maple syrup
- 1 to 2 pinches sea salt or to taste
- freshly ground black pepper to taste
- 1 cup cooked chickpeas rinsed and drained, and semi-smashed (see below)
- 1/4 cup diced celery
- 1/4 cup diced apple
- 2 - 4 tbsp diced green or red bell pepper
- 2 tsp capers optional
- 1 - 2 tbsp chopped fresh parsley optional
- per serving 1 leaf swiss chard
