Cauliflower Mac & Cheese
Low carb, vegan & amazingly tasty cauliflower mac & cheese!
Ingredients
- 1 head cauliflower broken into florets
- panko
- 1/2 tsp salt
- 1/4 tsp smoked paprika
- 1 pinch cayenne
Vegan Cheese
- 1 yukon potato
- 1 sweet potato
- 2 garlic cloves
- 1/4 cup cashews
- 1 Tbsp apple cider vinegar
- 2 Tbsp nutritional yeast
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 cup water
- 1/2 chipotle pepper optional spice
- 1/2 tsp smoked paprika optional to add flavor or spice
Instructions
Vegan Cheese
- Simmer potatoes in salted water till tender, about 10 minutes.
- Drain & blend in Vitamix with garlic, cashews, vinegar, nutritional yeast, onion powder, salt, olive oil, and water.
- Blend until smooth. Add chipotle pepper or smoked paprika if desired.
Mac & Cheese
- After making the cheese, add garlic, salt, smoked paprika & cayenne.
- Boil cauliflower florets 5 minutes. Drain & put into baking dish.
- Stir in cheese sauce.
- Top with panko.
- Broil 2 minutes until topping is lightly browned.
