Avocado Cilantro Lime Rice

Ingredients
  

  • 5 cups cooked brown rice
  • 2 avocado
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped cilantro
  • 3/8 teaspoon ground cumin
  • 1 clove garlic (minced, optional)
  • salt
  • freshly ground black pepper

Instructions
 

  • Mash avocados in a large mixing bowl. Stir in lime juice, cilantro, cumin and garlic, then season with salt and pepper to taste.
  • Stir in warm cooked rice and serve warm.
