Arugula, Apple Beet Salad
Ingredients
- 1 bunch arugula or a combination of arugula and spinach
- 2-3 roasted beets rough chopped
- 1 apple chopped (you could also use mandarins, oranges, or pears)
- 1/3 cup walnuts chopped
- Dressing
- 3 tbl white wine champagne or apple cider vinegar
- 1 tsp yellow mustard
- 1 tsp maple syrup
- 2 tbl water
- sea salt and pepper to taste
Instructions
- Put all of the salad ingredients a large salad bowl.
- Whisk dressing ingredients in small bowl.
- Pour over salad and toss.
- Roasting beets: Preheat oven to 375 degrees. Rinse any dirt or debris from the beets. Put beets on a large piece of aluminum foil. (Optional: drizzle with olive oil, salt and pepper.) Fold foil over the beets and place in an oven-proof container. Roast for 30 minutes or until beets are tender. Cool and remove skins.
