Roasted Brussels Sprouts & Spiced Apple Salad
Roasted brussels and spiced apple salad with cashew, gremolata, feta & pomegranate
Ingredients
- 1 lb Brussels sprouts
- 1 each Apple
- 1/4 tsp coriander
- 1/4 tsp cinnamon
- 4 oz Feta cheese
- 1 each Pomegranate
- 1 bunch Basil layer, roll leaves and slice
- 1 tbl Fresh Ginger grated or minced
Gremolata
- 1 cup Cashews
- 1/2 cup olive oil
- 1 each Lemon juiced and zested
- 1 bunch Cilantro
Instructions
- Rinse and cut brussels sprouts in half
- Core and slice apples, then cut slices in half to make evenly sized pieces
- Heat olive oil over medium high heat, then add brussels, cut side down. Cook 5 minutes.
- Toss apples with coriander and cinnamon, add to pan and saute till they start to change color
- While cooking, mix Gremolata ingredients together
- When apples and Brussels are tender but still firm toss in basil and ginger for 1 more minute
- Top with gremolata, feta cheese and pomegranate seeds.
Notes
Goes great with a grilled steak or blackened fish
